Spring is on the horizon, the earth is warming up and the green leaves are starting to emerge. Let's eat! After a long cold winter, early greens would be sought after to provide nutrition and vitamins that are lacking in the winter diet of preserved foods. Newly emerging edible shoots, greens and flowers make this season exciting. Shoots and greens are best gathered early, before these tender young plants protect themselves by becoming tough or bitter. Come along and let's search together and see what kind of salad we can make!
